I realise this is my first proper post so I don't want you to be misled. I don't do much cooking with my boys, in fact, I don't do much cooking at all. Since I moved into a house with an electric cooker I have given up trying to make new things. That was several years ago so maybe it's about time that should change....
The boys had been on at me to make some fudge for the last few days so I thought I'd give it a whirl.
My parents have a thermometer with all the boiling points of different sweets on it so I borrowed it, as I need all the help I can get. Next, I had to find a recipe. Mine seemed to have gone missing so I had a quick browse on the web and came up trumps on the Carnation website with a recipe for their Ultimate Fudge. Here is the recipe I used:
A 397g can of condensed milk
150ml milk
450g demerara sugar
115g of butter
A 20cm square tin lined with greaseproof paper.
Its actually quite a simple method, even I could manage it! Put everything in a pan and melt over a low heat until the sugar has dissolved.
Bring to the boil, then simmer for 10-15 minutes stirring continuously.
After this time, drop a small amount in a glass of cold water. A small ball of fudge should form. If it does, remove from the heat and stir until it cools and starts to set. If you want to add nuts or chocolate chips, now is the time to do it.
Finally, pour into the tin and flatten it out before leaving it to set. Then cut into squares.

I dont think its too bad. I must add that I am a toffee girl and not a huge fan of fudge. Everyone who has tried it has liked it. Personally, I think it is a bit stodgy for proper fudge but not bad for a first try. It is also edible which is a massive bonus for me!
I feel I should add that I didnt stir it continuously once it was off the heat. My arm was aching by this point (I was trying to get dinner and referee the impromtu toddler boxing in the front room) but it takes a while to cool anyway.
I also didnt have a tin the right size so I used a plastic lunch box which was a similar size. It also fits in the fridge easily and cuts down on washing up!

Ohh looks yummy I like fudge because I can't eat it that fast! I might try to find my dairy free condensed milk again gutted they took that offline! Xx
